Comida Mexicana - Rompope

It’s been a while since I added anything to my Mexican cuisine section, but seeing as Christmas approaches, here is a traditional drinky. Rompope is a rum and almond flavoured egg nog type drink. I think it’s something you either love or hate! How to make it? The recipe…

INGREDIENTS: 6 cups milk 1 1/2 cups sugar 8 egg yolks 1/3 cup blanched almonds 1/2 cinnamon stick 1/2 cup to 1 cup premium rum

PREPARATION: Simmer milk and sugar until mixture is hot, but not burning. Process the almonds in a food processer until a paste forms. Whisk the paste into the milk mixture and let it cool. Beat the egg yolks until creamy, and slowly add in the milk mixture a little at a time, continually mixing slowly.

I’ve taken so many photos of this building. Hundreds. Maybe thousands. But it is the most outstanding piece of architecture in Mexico City, both it’s interior and exterior. And when you walk past on a sunny day with blue skies, it’s hard not to pull your camera out for one more snap.
